Their experienced team work tirelessly to ensure they meet these exacting standards and they work hard to maximise their conservation of the land and encourage biodiversity. They employ natural lawnmowers (a flock of Sussex sheep) to graze in between the rows during the winter, whilst state-of-the-art technology to assesses and anyalyse what is happening at each site on a daily basis, ensuring a targeted approach to managing their vines. They employ the traditional Champagne method of production. All grapes are hand-harvested, whole bunch pressed and fermented in a mix of stainless steel and French oak, prior to a minimum of 36 months on lees which imparts incredible richness and complexity into their wines. Each wine is totally individual and already their award cabinet is full! This a Producer to watch for the future: their quality and interest is only going to keep on improving!
