Distiller Barney Wilczak pursues perfect to create award winning fruit distillates and botanical gins. Deep research and an obsessive focus, often leading to translation of ancient European specialist texts to rediscover forgotten techniques, have led to the distillation of Eaux de Vie that have never been seen on these shores before. It’s hard to convey the effort and integrity that is the baseline of Capreolus Distillery operations: from working with the ripening process by day and by hour, only choosing to collect when they are confident that they are reflecting the best each plant or tree has to offer, to each ingredient being inspected by hand, gently washed and slowly fermented at cool temperatures to best preserve aroma.

The experience and focus surrounding his work with fruit distillation led to a desire to create a gin of effortless complexity. Hundreds of test distillations, explorations of individual species and the best way to extract their unique perfume, led to the creation of Garden Swift gin, an enriched a palate of 34 botanicals. The production of such wonderful products is a costly pursuit without compromise. Reflecting this, their gin and Eaux de Vie are hand bottled and finished with traditionally printed letterpress labels. There’s no doubt in our minds that Barney Wilczak is the Carl Faberge of distillation: a true artist!
