2020 Burgundy, France, 75cl
In 2009, Sebastien succeeded his father with taking over the management of the domain. Since then, the winery now works organically with miniscule amounts of additives used in the wine making process and all the harvesting is done by hand. Vinification takes place with minimal interference and the wine is allowed to age for 18 months on lees, with a light filtration prior to bottling. A bright and juicy wine, with fine minerality lots of ripe golden apple, citrus and peach notes. The mouthfeel has a lovely density and offers an elegant lingering finish.

Behind the bottle: Sèbastien Giroux
Even though the vineyards have been in the safe hands of the Giroux family for nearly three centuries, Domaine Giroux is a relatively new up-and-coming producer in the area with Sebastien taking over the management of the domaine in 2009. Since then, he has made a number of changes, most significantly working 100% organically with miniscule amounts of additives used the in the wine making process. Everything is hand-harvested and vinification takes places with as little interference as possible: a natural long, cool fermentation followed by storage in stainless steel tanks. Sebastien bottles only when he feels his wines are ready, allowing some wines up to 30 months to mature, which is rare for this region.
