Mabis Biscardo Neropasso IGT Veneto

The fruit comes from a variety of sites where the soils vary considerably adding to the complexity of the wine. In addition, each valley offers different qualities to the wine, although there is always a high calcareous concentration, with lots of big stones in the first half metre of the ground. The wine is made via the Appassimento process where ripe and healthy grapes are selected at the time of the hand picking. The grapes are laid out in large perforated plastic boxes which are then stacked in the fruttaio (a large airy room) and the grapes allowed to lightly dry prior to pressing. The wine is then aged partly in steel tanks and partly in Tonneaux. This results in fuller bodied style, packed with intense fruit and balanced acidity. With hints of red cherry, black cherry, plum compote and spice, the mouthfeel is velvety with soft tannins at the end and a lovely, lingering length.

Behind the bottle: Mabis Biscardo

The house of Champagne Bollinger was founded in 1829 in the village of Aÿ in the heart the Champagne region. Still family-owned, Champagne Bollinger is famous for its use of Pinot Noir, reserve magnums and oak ageing techniques, the Bollinger wines are defined as much by the vines and the terroir as they are by the art of their blending and vinification. Sustainability and organic principles are key to the House’s philosophy, with Bollinger the first Champagne House to be awarded the Haute Valeur Environmentale certification.
