In the heart of the Clos des Mouches appellation, Domaine Chanson is one of the main owners with a plot of 4.3 hectares of which 2.2 ha are planted with Chardonnay. The vines are located in the heart of Clos des Mouches, surrounded by the original walls, mid-hillside of the hill, in a place called “Saint Désiré”. The calcarous marl soil benefit from an ideal location on the south-east-facing slopes of Mont Saint-Désiré, on the edge of the Premiers Crus de Pommard. The resulting wine is a beautiful gold colour. Floral notes blend with vanilla, citrus and green almond. The palate is precise and profund, offering wonderful verve, complex minerality and a long, generous finish.

Behind the bottle: Domaine Chanson

Founded in 1750, Domaine Chanson is based in Beaune, in the heart of the Burgundy region. Conceived under Louis XI and completed under François Ier, the medieval Bastion de l’Oratoire, at the heart of Domaine Chanson, is dedicated wholly to the ageing and safeguarding of wines from Chanson’s 43 hectares of vineyards. The four storey high structure, with 8m thick walls, provides an exceptional atmosphere for the maturation of fine Burgundian wines, maintaining a constant level of temperature and humidity and preserving the winemaking traditions of the Burgundy region.

The Domaine was purchased by the Bollinger family in 1999 and their investments have significantly improved the quality and appreciation of the wines in recent years. A modern winery was built in Savigny-lès-Beaune in 2010, where juice and grapes are transported by gravity, and precise plots of land are vinified separately. In 2015, a bespoke cooling tunnel was installed in the winery to cool the Pinot Noir grapes as soon as they arrive from the vineyards to preserve the freshness and elegance of flavours.

Domaine Chanson exclusively use grapes from Premier and Grand Cru vineyards and are one of the top Premier Cru specialists in Beaune, owning 25 ha of their own Premier Cru vineyards. The Chanson estate produces over a quarter of its own fruit requirements, with the utmost respect for nature. The other Pinot Noir and Chardonnay grapes are sourced from growers selected in alignment with Chanson’s quality commitments. Individual plot selection produces fruit which is vinified separately throughout the fermentation and ageing processes. Their ‘Domaine’ philosophy is focusing on the authenticity, purity and precision of style and terroir.
